This fancy cake may look like dessert, but friends, this is lunch, and it’s an awesomely deceptive and delicious lunch at that. This is edible spectacle is a beautiful example of Swedish sandwich layer cake, otherwise known as Smörgåstårta. It was made by Kathy Strahs of Panini Happy to celebrate the 4th anniversary of her blog. (Happy blogiversary!)

Smörgåstårta is traditionally made of layers of bread separated by creamy fillings and and a variety of savoury toppings. Kathy’s sandwich cake is made of homemade bread layered with smoked trout mousse, cucumbers, smoked salmon, mustard sauce, and shredded romaine lettuce. The cake was topped with a “frosting” made of sour cream and cream cheese and then decorated with smoked salmon, shrimp, hard-boiled egg slices, radishes and parsley. It’s so pretty we keep forgetting that it isn’t actually sweet.

Kathy used a receipe from Saveur to create this delectable wonder, but you can probably make a sandwich cake using just about any favourite sandwich as inspiration.
